Let it be known that I'm not a huge fan of breakfast. I think I've only woken up hungry twice in my entire life. Don't get me wrong, I LOVE going out to breakfast, but that is a treat that I look forward to most weekends. I force myself to eat brekky nearly everyday, so I try to entice myself into doing so by creating quick and simple recipes that are healthier than cereal, but don't take much longer than the time it takes to pop open a box of cheerios and pour the leche.
Here is a breakfast bowl that I had this last week and enjoyed immensely. It only took moments to prepare, it was light and surprisingly filling. Papaya Breakfast Bowl Natural Greek Yogurt 1/2 a papaya: remove seeds, cut and cube into bite size pieces 3-4 Fresh mint leaves, julienned Toasted sunflower seeds to top it off Bon Appetit! EMK
