Healthy Banana Coconut Cookies, 99% Paleo

Ingredients
  • 3 small, ripe bananas, mashed
  • 1 cup nut butter of choice ( I used Mayver's Coconut peanut butter)
  • ⅓ cup honey
  • 1 egg, whisked
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • pinch of salt
  • ½ cup of Chocolate Chips (I used regular, non paleo)
  • 5 tablespoons coconut flour 


Method
  1. Preheat oven to 350 degrees. Line a rimmed baking sheet with parchment paper.
  2. In a medium bowl, mix together banana, nut butter, honey, egg and vanilla. Then add in cinnamon baking soda, baking powder, and salt. Mix well.
  3. Add coconut flour and lastly, fold in the chocolate chips.
  4. Use an ice cream scoop or spoon to distribute the batter on to the baking sheet. Place them about 2 inches apart. Yields +/- 12 cookies.
  5. Bake for 18-20 minutes.
  6. Let cool before removing from baking sheet
  7. ENJOY!!!
