The title of this recipe kinda makes me sound like a bad mum, I get that!
But in all honesty, I was going on a six day trip to Melbourne and I had a ton of organic veggies that needed to be used. I decided to get cooking for my little girl because there was no way I was going to waste our lovely organic veg. This recipe is so easy and super delicious, yes I tried it! If you are like me and like to meal prep, make a big batch of quinoa for yourself to eat throughout the week and reserve a cup to set aside for the this recipe. Ingredients 9 small carrots 3 small/medium beets 1 medium sweet potato 1 cup of cooked quinoa Method Peel all the carrots and trim the ends Peel the beets, quarter and trim the ends as well (make sure the beets aren't cut too large because these will take the longest to cook and you want everything to be finished cooking around the same time). Peel the sweet potato and cut into cubes (all similar sized for even cooking) Place the carrots and the sweet potato in the water at the bottom of your steamer, add the beets to the steamer basket. Cook for 20-25 minutes, or until beets are just tender. Cook quinoa per instructions on the packet. Add cooked veggies and quinoa to your blender with some of the water and puree.
