No cooking required! OK, I lie. You have to cook just one thing. Just one... That's it. I had left over steak in the fridge, so I threw this delicious bad boy together in no time at all and had to share it with you. TIP: This is great for those of you who meal prep because you can cook up a big batch of fish, chicken, steak whatevs on Sunday and then add it to your mixed greens for your easy on - the- go lunch! As a busy mum myself, I live for food like this because it makes my life so much easier! Want to make your life even easier? While prepping your salad or making your lunch, leave a few bits aside for bubs. Mades for great finger food! (* Be careful with the broccoli as that could be a chocking hazard when it raw and dry).
Seared Rib Fillet Salad
Ingredients 1/2 avocado (chia seeds sprinkled on top) 1 carrot, grated 3 broccoli florettes- raw 1/4 red capsicum 2 cup of mixed organic greens Small handful of walnuts Seared rib fillet from Australian Natural Food Co Method Wash and spin dry your greens and place on the plate Add your grated carrot, capsicum, raw broccoli walnuts and avocado with sprinkled chia seeds (If I had onion, I SO would have added it) Cook and cut, or slice your pre-cooked rib fillet and add to the salad The most time consuming task is cutting, and that takes 5 mins max! Enjoy! EMK x I was too full from brunch the other day and decided to whip something up to take the lingering edge off when the midday "hangry" started to find me. I didn't want lunch, just something light, easy and refreshing on a hot summer day. I threw this delicious mini snack salad together for myself, but at the bottom of the page I modified it for two people. Sumptuous Summer Salad, Serves 1 1/4 red Papaya (paw paw), cubed Handful of fresh blueberries 1/2 Avocado, sliced 1 Lime wedge Method: Cut the paw paw open and remove the seeds with a spoon. Cut into wedges, carefully removing the skin and then dice to your desired size. Cut the avocado in half, peel the skin away and then place it face down on a cutting board to cut (This makes it easier to cut very thin slices) Throw all the ingredients into a bowl and squeeze the fresh lime wedge over the top. Enjoy! Sumptuous Summer Salad , Serves 2 1 medium red Papaya, cubed 1 Punnent fresh blueberries 1 large Avocado, sliced 1/2 a Lime EMK (Reminder: I'm not a chef. Hot Smoked Salmon Salad: Lunch for 1 hungry Yogi 1 handful of rocket & 1 handful of raw spinach 1/2 cup of brown rice (cold) 1 handful of green beans, chopped bite size & blanched 75 grams of hot smoked salmon Grape Kumato tomatoes, halved Red onion (as desired) Drizzled lightly with EVOO S&P as desired Dressing: 1 avocado (mashed, add garlic salt and splash of EVOO) EMK |
