1. Pulse the dates in your food processor until smooth
2. Add the oats, chocolate buttons, chia seeds and almond butter and blend until combined
3. Rill into whatever size balls you want ( I personally like to make a mixture of all different sizes)
4. Place them in the freezer to set for 15-20 minutes. You can leave them in the freezer, or move them to the fridge and keep them there for a week.

2 kilos of Australian Natural Food Co organic chicken carcasses
4 fresh bay leaves
4 small/medium carrots, roughly chopped
1 large white onion, peeled and quartered
5 cloves of garlic, peeled and bruised (smashed)
2-3 tablespoons of organic apple cider vinegar
Salt and pepper
Cold, filtered water
Place all the ingredients in your slow cooker, and add your filtered water until everything is just covered by the water.
Cook on LOW for 12-24 hours (I cooked mine for 21 hours to be exact!)
Strain contents through a fine mesh sieve and place in a glass jar in the fridge!

Meal prepping isn't for everyone, and it sure as hell wasn't for me before becoming a Mom. I'm not a huge leftover fan if I'm honest. I prefer to cook fresh food over turning the dial to 1:30 on the microwave.
However, I do love leftovers when my husband is away for work and I'm cooking for one. That's about it though. I know meal prep is different than leftovers, but the premise was kinda the same to me. I had to ask myself: Will putting the work in really make a difference, and will I mind eating food that has already been prepared?
The answer was a simple, yes and NO!
Meal prep has been huge help in our household. Putting in the time does make a huge difference, and no, I don't mind eating food that has been pre-prepared.
There were a few things I needed to implement to have the most amount of success with this new endeavor.
1. Meal Planner
I bought this one from KMART and it was a whopping $3. If you are taking the time to prepare your food ahead of time, then you should be able to jot down what you're having and when so that you don't forget what's in the Tupperware. I also recommend labeling them with sticky notes, especially if you're prepping food for multiple people. For instance, when I make overnight oats, mine differ from my husband's (his have diary, mine are dairy free), so I like to stack and label them accordingly with our initials.
This part had two components:
A. Storage for your meals / cut veggies
B. Storage for your produce
A. I just bought this 10 piece glass Pyrex set (in the collage below) from Harris Scarfe during the Boxing Day sales. It was $70, marked down to $34! I prefer glass to plastic for a lot of reasons. Glass is dishwasher, microwave and refrigerator safe. It also doesn't absorb odors, food stains or flavors. AND, let's not forget, glass is also better for the environment.

B. Storing veggies and keeping them fresh can me a mighty tough task. The veggie crisper drawer gets more and more full, with the newest produce sitting on top of the previously store-bought food items . . . and we know all know the outcome, don't we? Throwing away countless kilos of food annually, which is such a shame and hard of your wallet too.
So, how can we fix this dilemma? Cue Swag Bags. You guys know how I feel about turmeric if you read my latest blog post.
These burgers are so easy and make, healthy and fantastic for 8+ months - toddlers (and beyond). My daughter loved them. I like to incorporate some type of homemade burger on my Saturday meal prep day, and this is my latest made-up recipe which was a hit on all fronts, with all members of the family.
Turmeric Chicken Burgers
(makes 7-9 patties )
500 grams of chicken mince (free range, organic, you do you)
1 bunch coriander, washed well and roughly chopped
1 white onion, peeled and grated
1 egg (if vegan, don't use an egg- or add a tablespoon of chia seeds if you want)
1 large carrot, trim ends, peel, then grated
1 tsp cumin
1 tsp garlic salt
Take the mince out of the fridge 30 minutes prior to making the burgers
Add all the ingredients to a large bowl and mix well with your hands
While pan heats up, roll into desired size patties. Add a tablespoon of coconut oil (or avocado oil), and the cook approximately 4 minutes per side.
