Truth be told, I made this recipe up because we had bok choy that needed to be used. We had over purchased bok choy with the intention of making loads of sulforaphane smoothies, but my husband went out of town and I couldn't consume it all on my own.
I added it to my daughter's food for the health benefits, but also because I want to expose her to as many different tastes as possible while her palette is still developing.
Bok Choy & Carrot Purée
Serves 1 hungry 6+ month old
2 bok choy
2 large carrots
Trim the end of the bok choy and wash well
Peel carrot and trim the ends, cut into 3 cm pieces
Place the carrot in the water at the bottom of the steamer
Cook for about 15 minutes, or until the carrots are tender
Place the bok choy in the steamer basket when you have 5-7 minutes remaining
Reserve some of the cooking water and set aside
Add all the contents to your blender and purée
If the puree is too thick, add some of the cooking water to thin it out
Makes 4-5 servings, approximately 1/2 cup each
