Beet, Beet Baby

​Creamy Beet Puree

Serves 1 hungry 6 month old

Ingredients
1 beet, peeled and cubed 
2 large parsnips, peeled and chopped 
1 medium white potato, peeled and cubed 
TIP: Cut your veggies in similar size pieces to ensure all the pieces cook evenly

Method
Place the chopped potato and beet in the water at the bottom of the steamer 
Place the parsnip in the steamer basket, put the lid on.
Cook for 15-20, or until tender.
Reserve some of the fluid and set aside.
Drain excess water and place the cooked veggies in your blender and puree.
Add water until you reach your desired consistency. 

Serve immediately or freeze in ice cube trays / baby food freezer pods

Makes 4-5 serves (approx 1/2 cup each)

Beets are high in immune-boosting vitamin C, fiber, and essential minerals like potassium (essential for healthy nerve and muscle function) and manganese (which is good for your bones, liver, kidneys, and pancreas).

Parsnips contain a wide variety of vitamins, dietary fiber, folate, potassium and vitamin C

Potatoes are a good source of vitamin B6, potassium, copper, vitamin C, manganese, and phosphorus.
