Mango Breakfast Parfait (Serves 1 Hungry Yogi)
I packet of The Chia Co's Banana Mango instant oatmeal
1 Small mango, cubed
3 large strawberries, diced
Optional: Cinnamon sprinkled on top
Simply cook the oatmeal following the instruction on the back of the packet. Find a glass jar and layer alternately: fruit, oatmeal, fruit, oatmeal.
Makes a beautiful breakfast for the eyes and the belly.
Fruity, Nutty Summer Salad
Baby Kale (Aldi, $2)
Diced green pear with skin
Thinly sliced white onion
Freshly shredded parmesan cheese
Topped with sunflower seeds
Drizzled with EVOO and balsamic vinegar
S&P as desired
