Buy a cooked, rotisserie chicken of your choice from your local supermarket, shred into bitesize pieces with hands or fork
Cook 1 sweet potato for 45 mins,1 hr at 175C. (Wash well, poke with a fork and place in a preheated oven).
Let it cool, peel and add to salad in meaty chunks. I cook a few at once and then eat them cold in salads over the next couple days.
Slice halloumi, add to a DRY pan, grill until golden brown (or resembles cheetah spots)
Slice the red onion
Add all the ingredients to create your salad, give it a toss and drizzle with your choice of dressing.
I used extra virgin olive oil and fig balsamic

Mix well with a wooden spoon and place on a baking sheet lined with baking paper
Preheat the oven to 150 C
Bake at 150 C for 15 minutes, then toss and mix well

Bake for a final 10 minutes
Take it out of the oven and allow it to cool completly
Store in an airtight glass jar.
